~ Homemade Granola ~

Ok, so last night I made some homemade granola, b/c my hubbie and myself are trying to eat healthier! =) I still have that last 12 pounds of baby weight to lose (which I guess isn't so terrible since I put on a whopping WAY TOO MANY!) ha! Yes, I know...I took the saying "eating for two" a little too literally! Anyways, here's the granola recipe I used. I DO think it would be even better SWEETER... but it's good this way mixed in with plain yogurt and with fresh strawberries and blueberries on top! =) But if you plan to just eat it totally plain, then you might want to add more brown suger. And it makes a TON, so you might want to half the recipe.

Preheat oven to 325 degrees.

Ingredients:
8 cups old fashioned oats
1 cup wheat germ
1 cup oat or wheat bran
1 cup coconut
1 cup whole wheat flour
1 cup nuts (your choice) - I didn't use any in mine last night
* Also, you can add raisins if you like those =) *

Stir up.

Mix together:
1 cup brown sugar
3/4 cup oil
1 cup water
1 1/2 tsp. salt
1 Tblsp. vanilla

Heat to dissolve brown sugar. Add vanilla. Pour the wet mixture in the dry mixture. Mix until moist.
Press 1/2 of mixture into large, flat pan.
Bake 15 minutes. Turn and bake 15 additional minutes.
Remove granola and place in bowl.
Bake the remaining granola the same way.
Granola is best if left in oven (turned off) for 6 to 8 hours! - (I actually didn't do that to mine & it turned out fine)
