So, if you've been following our blog, you know I've taken cake decorating classes while we've been in Louisville. I've made cakes for my grandparent's 60th anniversary, my mom's surprise birthday party, etc... but never for a wedding or anything! Well, one of Sam's co-workers saw a picture of a cake I made on Sam's phone at work and asked if I would make their wedding cake! So I bounced some ideas back and forth with them, and they just wanted something really simple, fondant, with their wedding colors incorporated (black, white). I sent them a few ideas, and this is what they picked! =) The cake turned out well... BUT they didn't want different flavors for each tier. They wanted the ENTIRE cake to be homemade carrot cake! So I ended up making 9 batches of this recipe I had, and it took FOREVER!!! I bought this little ten dollar food processor at Wal-mart to chop up the carrots, and that was by far the most time consuming part. And then, after I had four batches of cake made, the $10 food processor broke, so I had to have Sam go and pick me up a $40 one. Best investment ever! I had the rest of the batches made so quickly after that! Seriously, I should have splurged on the $40 food processor from the get go.. it would have saved me HOURS! =)
